Sautéed Swiss Chard
Recipe: Swiss Chard Lentil Soup
Swiss Chard Lentil Soup
Swiss chard pairs well with lentils. This soup is a great way to get the nutrition of both.
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 medium carrots, peeled and chopped
- 2 stalks of celery, chopped
- 3 garlic cloves, minced
- ¼ cup parsley, chopped
- 2 bay leaves
- 1 ½ cups lentils
- 1 14.5 ounce can whole tomatoes, crushed by hand
- Salt and pepper
- 2 ½ quarts water
- 1 tablespoon soy sauce
- 1 bunch Swiss chard, leaves and stems separated. Tough stems discarded, tender stems and leaves chopped.
- Grated Parmesan for serving
Directions
- In a large pot, heat olive oil over medium heat. Add the onions and saute until lightly browned, about 8-10 minutes.
- Add carrots, celery and 2 teaspoons of salt. Saute until softened.
- Add garlic and parsley and saute for 2 minutes.
- Add bay leaves, lentils, tomatoes, several grindings of pepper, and the water. Bring to a boil, reduce heat to a simmer, and cook, partially covered, for 40 minutes.
- Add soy sauce and chard. Cook for an additional 30 minutes.
- Check for seasoning. Serve with grated Parmesan.
