Recipe: Mashed Squash Grilled Cheese Sandwiches
Mashed Squash Grilled Cheese Sandwiches
Ingredients
- Leftover cooked squash
- Sliced or shredded cheese
- Sliced bread
- Greens, such as spinach, arugula, or kale
- Spices to taste
- Butter or oil for grilling
Directions

Scoop out squash flesh or peel if skin is still on the squash.

Lightly mash squash on a bread slice – as much to taste.

Sprinkle with spices of choice – Aiko likes za’atar, a middle eastern blend.

Top with sliced cheese of choice – Aiko’s favorite is cheddar.

Top with greens of choice. Lettuce may not work well when grilling the sandwich.

Grill both sides until browned and cheese is a bit melty-either in a panini press, George Forman grill, or in a frying pan with a little olive oil or butter, if you like.
