Mashed Squash Grilled Cheese Sandwiches

Turkey isn’t the only thing that might be left over after Thanksgiving! If you have roasted squash to spare, take a cue from Open Table’s Business Manager, Aiko Pinkoski, and elevate your next-day lunch with a gourmet twist—add it to a grilled cheese sandwich. The recipe works well with any winter squash. Aiko bakes extra slices or halves just to enough to make these sandwiches. Feeling creative? Toss in other leftovers too, like turkey, for an extra flavorful bite!

 

Ingredients

  • Leftover cooked squash
  • Sliced or shredded cheese
  • Sliced bread
  • Greens, such as spinach, arugula, or kale
  • Spices to taste
  • Butter or oil for grilling

Directions

  1. Scoop out squash flesh or peel if skin is still on the squash.
  2. Lightly mash squash on a bread slice – as much to taste.
  3. Sprinkle with spices of choice – Aiko likes za’atar, a middle eastern blend.
  4. Top with sliced cheese of choice – Aiko’s favorite is cheddar.
  5. Top with greens of choice.  Lettuce may not work well when grilling the sandwich.
  6. Grill both sides until browned and cheese is a bit melty-either in a panini press, George Forman grill, or in a frying pan with a little olive oil or butter, if you like.
