Recipe: Cherry Yogurt Parfaits
Cherry Yogurt Parfaits
Ingredients
- ½ pound fresh cherries, pitted and roughly chopped
- 2 tablespoons sugar
- 1 tablespoons water
- 2 cups yogurt
- 1 tablespoon honey
- 1 ounce pistachios, chopped
- 6 chocolate cookies, crumbled
Directions
- Place cherries, sugar and water in a small saucepan and bring to a simmer. Cook for 3 minutes, then reduce heat and simmer for another 3 minutes. Turn off heat and set aside to cool completely.
- Stir honey into yogurt.
- Assemble parfaits. Place crumbled cookies in the bottom of four parfait glasses. Add ¼ cup of yogurt, scatter pistachios over yogurt, add cherry compote. Repeat the layers of yogurt, pistachios and cherries. Serve immediately.
