Scallion Chicken

This is a quick and easy way to use the scallions that look so appealing in the spring.

Ingredients:

  • 1 tsp soy sauce
  • 1 tsp cornstarch
  • ½ teaspoon pepper
  • 1 teaspoon sherry
  • 1 teaspoon minced ginger
  • 1lb. boneless skinless chicken breast, cut into 1-inch cubes
  • 3 tablespoons neutral oil
  • 4-6 stalks scallions, quartered lengthwise, and cut into 1-inch pieces
  • Pinch of sugar
  • 1 tablespoon fish sauce
  • Sesame seeds for garnish (optional)

Directions

  1. Combine the first five ingredients in a small bowl. Add chicken and marinate for about 30 minutes.
  2. Heat oil in a wok or 12-inch skillet over high heat until it shimmers.
  3. Add chicken and cook, until just cooked through, stirring continuously. Remove chicken to a plate.
  4. Add scallions, and stir fry for 30 seconds to a minute.
  5. Return chicken to pan, add sugar and fish sauce.
  6. Cook for another minute and serve, scattering sesame seeds over top if desired.
