Recipe: Scallion Chicken
Scallion Chicken

This is a quick and easy way to use the scallions that look so appealing in the spring.
Ingredients:
- 1 tsp soy sauce
- 1 tsp cornstarch
- ½ teaspoon pepper
- 1 teaspoon sherry
- 1 teaspoon minced ginger
- 1lb. boneless skinless chicken breast, cut into 1-inch cubes
- 3 tablespoons neutral oil
- 4-6 stalks scallions, quartered lengthwise, and cut into 1-inch pieces
- Pinch of sugar
- 1 tablespoon fish sauce
- Sesame seeds for garnish (optional)
Directions
- Combine the first five ingredients in a small bowl. Add chicken and marinate for about 30 minutes.
- Heat oil in a wok or 12-inch skillet over high heat until it shimmers.
- Add chicken and cook, until just cooked through, stirring continuously. Remove chicken to a plate.
- Add scallions, and stir fry for 30 seconds to a minute.
- Return chicken to pan, add sugar and fish sauce.
- Cook for another minute and serve, scattering sesame seeds over top if desired.
