Recipe: Squash Tian

Squash Tian

This delicious recipe was sent to us by one of our followers.

The quantities in this recipe are not that important, but the process is. It is particularly important to make sure that the oven is thoroughly preheated.

Serves: approximately 4 people

Ingredients:

  • ⅓ cup olive oil or butter, plus enough to coat roasting pan (could use cooking spray for that)
  • 2 large butternut squash (or four delicata squash)
  • ⅓ – ½ cup Flour
  • Salt and Pepper to taste
  • ⅓ Cup finely grated Parmesan cheese
  • 2-3 Cloves of minced garlic

Directions

  1. Preheat oven to 400 degrees (important)
  2. Coat the bottom of a large shallow baking dish or roasting plan with olive oil, melted butter, or cooking spray
  3. Peel, seed and cut the squash into one inch cubes
  4. Shake the squash in a bag of flour, salt and pepper until it looks like Turkish taffy and place in bakig dish
  5. Scatter grated Parmesan cheese across the top of the squash.
  6. Scatter minced garlic across the top.
  7. Drizzle olive oil across the top of the squash.
  8. Bake in 400 degree oven for 30-40 minutes, tossing 3-4 times while cooking.
  9. Serve immediately.
