Recipe: Mashed Carrots and Parsnips
Mashed Carrots and Parsnips
Ingredients
- 1 pound carrots, scrubbed, peeled and cut into 1 ½” pieces
- 1 pound parsnips, scrubbed, peeled and cut into 1 ½” pieces
- ½ cup cream or half-and-half
- 1 tablespoon butter
- Salt and pepper
- ⅛ teaspoon nutmeg
Directions
- Bring a saucepan of salted water to a boil. Add carrots and parsnips, simmer for 15 to 20 minutes, until just tender. Drain.
- Purée vegetables with remaining ingredients, adding salt and pepper to taste.
