Mashed Carrots and Parsnips

Ingredients

  • 1 pound carrots, scrubbed, peeled and cut into 1 ½” pieces
  • 1 pound parsnips, scrubbed, peeled and cut into 1 ½” pieces
  • ½ cup cream or half-and-half
  • 1 tablespoon butter
  • Salt and pepper
  • ⅛ teaspoon nutmeg

Directions

  1. Bring a saucepan of salted water to a boil. Add carrots and parsnips, simmer for 15 to 20 minutes, until just tender. Drain.
  2. Purée vegetables with remaining ingredients, adding salt and pepper to taste.
