Fresh Ideas: Watermelon

Few things say summer quite like a slice of cold watermelon. Sweet, hydrating, and endlessly versatile, this seasonal favorite is more than just a picnic staple — it’s a simple way to make the most of what’s fresh right now. Whether you’re looking to cool off on a hot afternoon or find a new way to use up extra melon before it goes soft, here are a couple of fresh ideas to try this summer.

Watermelon Salsa
: Combine 3 cups diced watermelon with ½ cup diced red or yellow bell pepper, ¼ cup chopped red onion, chopped cilantro, and the juice of one lime. If you like a little heat, add a finely chopped jalapeño. Serve with tortilla chips or spoon it over grilled chicken, fish, or black beans.

Grilled Watermelon
: Brush thick watermelon slices lightly with oil and grill for 2–3 minutes per side. Sprinkle with a pinch of salt and top with crumbled feta and fresh mint or basil. Grilling caramelizes the natural sugars and adds a subtle smoky flavor.

Watermelon Agua Fresca: Blend 4 cups seedless watermelon with the juice of one lime and 1 cup cold water. Taste and add a little honey or sugar if needed. Serve over ice with fresh mint.

Kitchen Tip

Cut watermelon keeps best in the refrigerator in a covered container and is delicious served ice cold. If you have more than you can eat, freeze cubes on a baking sheet, then transfer them to a freezer bag. They’re perfect for smoothies or can be blended into a refreshing frozen drink—no ice needed!
