Banana Zucchini Bread

Ingredients:

  • 1-1/2 cups shredded, unpeeled zucchini
  • 2 medium ripe bananas, mashed (about 1 cup)
  • 4 eggs
  • 1-3/4 cup sugar
  • 1 cup vegetable oil or applesauce
  • 3 cups flour
  • 1-1/2 tsp baking powder
  • 1-1/2 tsp baking soda
  • 1-1/2 tsp ground cinamon
  • 1 tsp salt
  • 1 cup chocolate chips, walnuts, dried cranberries, sunflower seeds or other fun add-ins (optional)

Directions

  1. Grease two 9×5 inch loaf pans. Preheat over to 350°
  2. In a large bowl, beat eggs. Blend in sugar and oil/applesauce.
  3. Add mashed banana and mix well.
  4. Stir in shredded zucchini until well combined.
  5. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Stir dry ingredients in banana-zucchini mixture.
  6. Gently fold in nuts or other add-ins.
  7. Pour into loaf pans. Bake 50 minutes or until toothpick comes out clean.

Makes two loaves.
