Recipe: Banana Zucchini Bread
Banana Zucchini Bread
Ingredients:
- 1-1/2 cups shredded, unpeeled zucchini
- 2 medium ripe bananas, mashed (about 1 cup)
- 4 eggs
- 1-3/4 cup sugar
- 1 cup vegetable oil or applesauce
- 3 cups flour
- 1-1/2 tsp baking powder
- 1-1/2 tsp baking soda
- 1-1/2 tsp ground cinamon
- 1 tsp salt
- 1 cup chocolate chips, walnuts, dried cranberries, sunflower seeds or other fun add-ins (optional)
Directions
- Grease two 9×5 inch loaf pans. Preheat over to 350°
- In a large bowl, beat eggs. Blend in sugar and oil/applesauce.
- Add mashed banana and mix well.
- Stir in shredded zucchini until well combined.
- In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Stir dry ingredients in banana-zucchini mixture.
- Gently fold in nuts or other add-ins.
- Pour into loaf pans. Bake 50 minutes or until toothpick comes out clean.
Makes two loaves.
