Recipe: Tomato Basil Pasta
Tomato Basil Pasta

Ingredients:
- 2 lbs tomatoes, chopped
- 1 cup (or more) loosely packed basil leaves, chopped
- 2 tbls olive oil
- Clove garlic, minced
- 1 pound spaghetti (or other thin pasta)
- Salt
Directions
- Bring a pot of water to a boil. At the same time, heat oil in a large skillet.
- Chop tomatoes.
- When the oil is hot, add garlic and cook for one minute, stirring constantly.
- Add the chopped tomatoes, cover, and cook over medium heat for ten minutes, or until saucy.
- Roughly chop the basil leaves. Remove the cover, add chopped basil and salt to taste. Cook uncovered for another six minutes.
- Cook the spaghetti according to package directions. When done, drain and add to sauce, mixing thoroughly.
- Sprinkle with grated Parmesan cheese and serve.
