Recipe: Tomato Basil Pasta

Tomato Basil Pasta

Ingredients:

  • 2 lbs tomatoes, chopped
  • 1 cup (or more) loosely packed basil leaves, chopped
  • 2 tbls olive oil
  • Clove garlic, minced
  • 1 pound spaghetti (or other thin pasta)
  • Salt

Directions

  1. Bring a pot of water to a boil. At the same time, heat oil in a large skillet.
  2. Chop tomatoes.
  3. When the oil is hot, add garlic and cook for one minute, stirring constantly.
  4. Add the chopped tomatoes, cover, and cook over medium heat for ten minutes, or until saucy.
  5. Roughly chop the basil leaves. Remove the cover, add chopped basil and salt to taste. Cook uncovered for another six minutes.
  6. Cook the spaghetti according to package directions. When done, drain and add to sauce, mixing thoroughly.
  7. Sprinkle with grated Parmesan cheese and serve.
