Pomegranate Avocado Salsa

If your consumption of mandarin oranges is limited to eating one out of hand or what comes in a can, this is a great way to broaden your experience. Absolutely delicious, this recipe was first published in Cooking Light. It is also great spooned over fish.

Ingredients:

  • 1⅓ cups diced, peeled avocado (about 2 avocados)
  • 3 tablespoons fresh lime juice
  • 3 cups mandarin or clementine sections (about 6-8 whole fruits)
  • 1 cup pomegranate seeds
  • ½ cup thinly sliced scallions
  • ½ cup minced fresh cilantro
  • 2 tablespoons honey
  • 1 jalapeño pepper, seeded and minced

Directions

  1. Combine avocado and lime juice in medium bowl; toss gently to coat.

  2. Add mandarin segments, pomegranate seeds, scallions, cilantro, honey and jalapeño; toss gently to combine.

  3. Serve salsa with chips.
