Rhubarb Salsa “Al Pastor”

Chef Jonathan Gilman’s Korean Red Chile Cod Tacos captivated the judges palettes, earning him the Chopped for Charity 2024 Championship. He graciously shared his “secret sauce”: his Rhubarb Salsa “Al Pastor” recipe, which highlights the competitions secret ingredient of rhubarb as well as cilantro. Add it to your own fish tacos, or it would also be excellent with other grilled or roasted fish or chicken. 

Ingredients:

  • 1 cup cider vinegar
  • 1 cup juice from a can of pineapples
  • 1 cup sugar
  • 2 cups diced rhubarb
  • 1 teaspoon coriander
  • 2 teaspoons salt
  • 1/2 cup diced red onion
  • 2 Tablespoons sliced cilantro
  • 1/4 cup thinly sliced jalapeño

Directions

  1. Bring cider vinegar, juice and sugar to a simmer.
  2. Pour over the rhubarb, cover and let sit at 10 minutes.
  3. Add coriander and salt.
  4. In a mixing bowl, once rhubarb has cooled, mix with the red onion, cilantro and thinly sliced jalapeño.
