Roasted Radishes

Roasting in the oven transforms radishes into a sweet, meaty side dish. And it’s a great way to use up extras.


  • 1½ pounds globe radishes.
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • Pinch of black pepper
  • Optional additions: 2 minced garlic cloves; 1 or 2 tablespoons of melted butter;  minced herbs, such as tarragon, parsley or chives; a drizzle of honey; or a couple of tablespoons of tahini sauce


  1. Preheat oven to 400 degrees.
  2. Prepare radishes by trimming tails, removing stems and cutting larger ones in half.
  3. In a bowl, toss radishes with olive oil, salt and pepper until well coated. Spread out on a sheet pan in one layer.
  4. Roast until radishes are golden brown and easily pierced with a knife tip, 25 minutes or more, depending on size. If using garlic, add after first 10 minutes of cooking.
  5. Remove from oven, toss with any of the optional ingredients and serve.
