Recipe: Roasted Radishes
Roasted Radishes
Roasting in the oven transforms radishes into a sweet, meaty side dish. And it’s a great way to use up extras.
Ingredients:
- 1½ pounds globe radishes.
- 1 tablespoon olive oil
- ½ teaspoon salt
- Pinch of black pepper
- Optional additions: 2 minced garlic cloves; 1 or 2 tablespoons of melted butter; minced herbs, such as tarragon, parsley or chives; a drizzle of honey; or a couple of tablespoons of tahini sauce
Directions
- Preheat oven to 400 degrees.
- Prepare radishes by trimming tails, removing stems and cutting larger ones in half.
- In a bowl, toss radishes with olive oil, salt and pepper until well coated. Spread out on a sheet pan in one layer.
- Roast until radishes are golden brown and easily pierced with a knife tip, 25 minutes or more, depending on size. If using garlic, add after first 10 minutes of cooking.
- Remove from oven, toss with any of the optional ingredients and serve.
