Pomegranate Avocado Salsa

If your consumption of mandarin oranges is limited to eating one out of hand or what comes in a can, this is a great way to broaden your experience. Absolutely delicious, this recipe was first published in Cooking Light. It is also great spooned over fish.
Ingredients:
- 1⅓ cups diced, peeled avocado (about 2 avocados)
- 3 tablespoons fresh lime juice
- 3 cups mandarin or clementine sections (about 6-8 whole fruits)
- 1 cup pomegranate seeds
- ½ cup thinly sliced scallions
- ½ cup minced fresh cilantro
- 2 tablespoons honey
- 1 jalapeño pepper, seeded and minced

Combine avocado and lime juice in medium bowl; toss gently to coat.

Add mandarin segments, pomegranate seeds, scallions, cilantro, honey and jalapeño; toss gently to combine.

Serve salsa with chips.
